Cucumber Shrimp Sushi Roll Recipe

This light sushi roll is filled with crisp cucumber and succulent shrimp and is ideal for a light lunch or snack. The tangy pickled ginger and spicy wasabi paste balance out the flavor combination.

  • Prep Time: 25 minutes
  • Cook Time: 20 minutes
  • Total Time: 45 minutes

Instructions

  • Sushi rice should be cooked according to package directions.
  • Combine rice vinegar, sugar, and salt in a small saucepan.
  • Stir constantly over medium heat until the sugar dissolves.
  • Mix the vinegar mixture into the cooked rice.
  • On a sushi mat, place a sheet of nori seaweed.
  • Half of the rice should be evenly distributed over the nori, leaving a 1-inch border at the top.
  • Half of the shrimp and cucumber should be placed on top of the rice.
  • Roll the sushi tightly and shape it with the mat.
  • Rep with the rest of the ingredients.
  • Each roll should be cut into 6 pieces.
  • With soy sauce, wasabi paste, and pickled ginger, serve.
