Cucumber Avocado Roll Recipe

This Cucumber Avocado Roll recipe is a quick and easy way to make sushi at home. The creamy avocado and refreshing cucumber complement the sticky rice and crispy nori perfectly.

  • Prep Time: 30 minutes
  • Cook Time: 20 minutes
  • Total Time: 50 minutes

Instructions

  • Rinse the sushi rice with cold water until it runs clear, then drain thoroughly.
  • Add 2 cups of water and the rinsed sushi rice to a medium saucepan.
  • Bring to a boil, then reduce to a low heat, cover, and leave to cook for 20 minutes.
  • After 20 minutes, turn off the heat and leave the pot covered for another 10 minutes.
  • In a small saucepan, combine the rice vinegar, sugar, and salt while the rice is cooking.
  • Cook on low heat until the sugar and salt dissolve.
  • Place aside.
  • Transfer the rice to a large mixing bowl after it has cooked and cooled slightly.
  • Stir in the vinegar mixture gently to combine.
  • On a bamboo sushi mat, place a sheet of sushi nori.
  • Wet your hands and grab a small handful of rice.
  • Leave a 1-inch border at the top when pressing the rice onto the nori.
  • Arrange the avocado and cucumber slices in the center of the rice.
  • Roll the sushi tightly with the bamboo mat.
  • To seal the roll, dampen the top border of the nori with water.
  • Make 4 rolls with the remaining ingredients.
  • Cut each roll into 8 pieces with a sharp knife.
  • With soy sauce, wasabi, and pickled ginger, serve.
