- Rinse the sushi rice with cold water until it runs clear, then drain thoroughly.
- Add 2 cups of water and the rinsed sushi rice to a medium saucepan.
- Bring to a boil, then reduce to a low heat, cover, and leave to cook for 20 minutes.
- After 20 minutes, turn off the heat and leave the pot covered for another 10 minutes.
- In a small saucepan, combine the rice vinegar, sugar, and salt while the rice is cooking.
- Cook on low heat until the sugar and salt dissolve.
- Place aside.
- Transfer the rice to a large mixing bowl after it has cooked and cooled slightly.
- Stir in the vinegar mixture gently to combine.
- On a bamboo sushi mat, place a sheet of sushi nori.
- Wet your hands and grab a small handful of rice.
- Leave a 1-inch border at the top when pressing the rice onto the nori.

- Roll the sushi tightly with the bamboo mat.
- To seal the roll, dampen the top border of the nori with water.
- Make 4 rolls with the remaining ingredients.
- Cut each roll into 8 pieces with a sharp knife.
