Tuna, Avocado and Kiwi Sushi Roll Recipe

Instructions
- Drain the sushi rice after rinsing it in a strainer until the water runs clear.
- In a medium pot, bring the rice and 1 1/4 cups of water to a boil over high heat.
- Reduce the heat to low, cover, and allow to cook for 18 minutes.
- Remove the rice from the heat and set aside for 10 minutes, covered.
- Whisk together the rice vinegar, sugar, and salt in a small bowl until the sugar and salt are dissolved.
- When the rice has slightly cooled, stir in the vinegar mixture until it is coated and glossy.
- Place a sheet of nori, shiny side down, on a sushi mat or plastic wrap.
- Half of the rice should be evenly distributed over the nori, leaving a 1-inch border at the top edge.
- Place half of the tuna, avocado, and kiwi slices on top of the rice.
- Tightly roll the sushi away from you with the sushi mat or plastic wrap, using the border at the top edge to seal the roll.
- Make a second roll with the remaining ingredients.
- Serve each roll cut into 8 pieces right away.
