Instructions

  • Rinse the sushi rice with cold water in a strainer until the water runs clear.
  • In a medium saucepan, bring the rinsed rice and water to a boil.
  • Reduce to a low heat, cover, and cook for 18-20 minutes, or until the water has been absorbed and the rice is tender.
  • Warm the rice vinegar, sugar, and salt in a small saucepan over medium heat until the sugar dissolves.
  • Take the pan off the heat.
  • When the rice is done, transfer it to a large mixing bowl and pour over the vinegar mixture.
  • Allow to cool to room temperature after stirring.
  • Arrange a sheet of nori on a sushi mat, shiny side down.
  • Spread a thin layer of rice over the nori with wet hands, leaving a 1-inch border at the top edge.
  • Arrange the avocado, cucumber, and crab meat in a line across the rice.
  • Roll the nori and rice over the filling, tucking it in tightly as you go, using the sushi mat.
  • Moisten the top border of the nori with water and roll the sushi until it is sealed.
  • Rep with the rest of the nori and filling.
  • Serve the sushi in 1-inch slices cut with a sharp knife.
