- Place a sheet of nori, shiny side down, on a sushi mat.
- Wet your hands and spread about 1/2 cup rice over the nori, leaving a 1-inch border on top.
- Arrange 2 shrimp, cucumber slices, and avocado slices on top of the rice.
- Roll the mat up, gently pressing to make a tight roll.
- Repeat with the remaining nori, rice, shrimp, cucumber, and avocado to make another roll.
- Slice the rolls and serve with pickled ginger, soy sauce, and wasabi.
