Cucumber, Crab and Avocado Sushi Roll Recipe

Instructions
- Combine the sushi rice and water in a saucepan.
- Bring to a boil, then reduce to a low heat and continue to cook for 20 minutes, or until the rice is tender and the water is absorbed.
- Combine the rice vinegar, sugar, and salt in a small bowl.
- Microwave on high for 30 seconds, or until the sugar dissolves.
- To combine, stir everything together.
- Add the vinegar mixture to the cooked rice in a large mixing bowl.
- Allow to cool to room temperature after thoroughly mixing.
- On a sushi mat, place a sheet of nori seaweed.
- Cover the nori with a layer of the cooled rice, leaving a 1-inch border at the top edge.
- Arrange the cucumber, crabmeat, and avocado across the rice, 1 inch from the bottom edge.
- Roll the sushi tightly, tucking in the filling as you go, using the sushi mat.
- Moisten the top border of the nori with water and roll up tightly.
- Recycle the nori, rice, and filling ingredients as needed.
- Cut the sushi rolls into 1-inch pieces with a sharp knife.
- With soy sauce, wasabi, and pickled ginger, serve.
